There is something about the peel-apart, melt-in-your-mouth gooey-ness of a grilled cheese sandwich that speaks straight to the hearts of foodies everywhere. They are the epitome of comfort foods, both crispy and soft, buttery and cheesy and bursting with flavor in every decadent bite. And you know what makes them even better? Bacon.

If you have never added bacon to a grilled cheese then my oh my – you truly don’t know what you are missing. (Because let’s face it, bacon can make just about ANYTHING better!) I have just discovered something that even tops a sandwich overflowing with creamy hot melted cheese and crispy, smoky bacon. Hard to believe, I know. But it exists, I promise. What could possibly improve perfection, you ask? Guacamole. Kevin Lynch, a popular food blogger, can be thanked for bringing this into my – and now your – life.

He even goes a step further towards making this combination one to be reckoned with by adding broken tortilla chips to the sandwich, as a nod to the classic tortilla chip and guacamole dip combo. This is fusion cooking to a ‘tee’, folks! Now I must add a bit of disclosure here; this sandwich can be QUITE messy to eat. However, one bite in and you will not mind at all – it is THAT good. The creamy guacamole mixes perfectly in with the melted cheese while the smokiness of the bacon brings out the distinct flavors of each in an explosion of taste that will have your taste buds begging for the next bite. All the while, the tortilla chips are lending a satisfying crunch to every morsel.

If you are looking for a way to use up some leftover guacamole in the fridge, I cannot recommend this recipe highly enough. In fact, it is so good you may even want to whip up a fresh batch just for this culinary delight! The trick to making it to perfection is to ensure the ingredients are the same temperature, after all, you want the guac and cheese to melt together in a symbiotic gooey-ness. So be sure you pull everything out of the refrigerator at the same time and bring everything to room temperature before making.

Bacon Guacamole Grilled Cheese Sandwich:

  • 2 slices Bacon (cooked crisp & drained of grease)
  • 2 slices Sourdough Bread
  • 1 Tbsp butter 1/2 Cup Cheddar & Monterey Jack Cheese (shredded)
  • 2 Tbsp Guacamole 1 Tbsp Tortilla Chips (crumbled)

1 – Spread the butter on one side of each slice of bread.

2 – Sprinkle half of the cheese on the dry side of one piece of bread, then layer the guacamole and bacon on top. Add the tortilla chips and the rest of the cheese, and place the other piece of bread on to complete the sandwich, butter side up.

3 – Grill over medium heat for about three minutes on each side, until the cheese has melted and the bread is lightly browned. Enjoy your new favorite grilled cheese!
